When it comes to professional wedding cakes, however, the main style of icing used is fondant. It has the smoothest surfaces, can yield the brightest colors, and when it is properly made it has delicious tastes. Unfortunately fondant, when purchased cheaply or made wrongly, tastes akin to plastic.

Types of Fondant

  • Rolled
    • For those who want to learn how to make a wedding cake, rolled fondant is the most common type and works wonders for covering an entire cake. It can be purchased or made, and when you get it you roll it out first and then it hardens. • Pourable
    • Pourable is similar to a ganache and makes for a beautiful shiny exterior. It is a liquid at first and is poured on top of a cake so that it dries into a somewhat hard surface.
  • Sculpting
    • Sculpting fondant is the least tasty of the three and is not for those who are first wanting to learn how to make a wedding cake. It is for flowers, figures, and other shapes because it is a thicker fondant and can be sculpted and molded to the desired shape.
